Yummy Spring Day Lunch

Recently, my husband went vegetarian on me and though it was daunting at first, I love creating fun meat-less meals for him. We were all working outside yesterday so I thought this would make a great (not to mention quick) lunch.

This one's as easy as it gets -- take some bread (hubby likes whole wheat) and throw some cheese, sliced cucumbers and sprouts on it, maybe even some roasted red pepper or raw onion. Cut up some strawberries and you (or at least I) have one happy hubby!
